Just ate Tha Tahini Crustini as my first snack of my birthday. Let me tell you why it is the perfect snack. It is an adult peanut butter and jelly. I'm gonna take it piece by piece. Sourdough bread is the perfect vessel, it's soft and the sour taste makes up for the lack of sugar in the tahini. The tahini has a velvety texure with a rich nutty flavor, now it can be a bit bitter for some, but that's where the green olives come in. The salty brine taste pops with each bite masking the bitterness of the tahini, leaving the subtle sweetness of the green olive. Green olives are also bitter on back end, that's where the cheddar comes in to elbow that bitterness out of your mouth. I keep the olives on the side so I can bite it all sequentially to rally these bad news bears of ingredients into the perfect snack team.
I went to costco and got a pack of sourdough loaves, a giant jar of olives, and a a 10lbs jug of sesame seeds to make my own tahini. I unapologetically love this snack, and would never have thought to try it without the mastermind that is Jeremy. That being said if you eat it wrong it is shit.
