I smoked 3 racks of ribs at 225 and two hit 200 degrees internal 5 and a half hours in. The last rack did not go over 185 at 7 hours. What’s the deal with that?

I have a two year old dog that’s extremely aggressive towards people who try to pet him. He’s also shown aggression towards small children. It is like he’s scared of them for some reason and tries to bite when they turn their backs to the dog. Is this my fault because I didn’t socialize him? And can I do something about it?
