900 g bf 100 g ww, 750 g h20, 20 g salt, 200 g starter. Mix everything except salt and 50 g water, let sit 45 min, add salt and remaining water, 4 folds 45 minutes apart. Let site till 50% increase in bulk. Put into banatans, lets sit in fridge 16 hours. Bake in Dutch oven 450 f, 20 minutes covered 25 minutes uncovered.

Same everything two different ears. Didn’t cut in yet, waiting 90 minutes so in am will look at crumb. Seems promising. Can post crumb pics tomorrow.
