2nd batch of mead. Used 1 gallon apple cider and 3 ish pounds honey. OG 1.130. Step fed it. Added pectic enzyme day 2. My first med (traditional) took about 7 weeks with D47. I used D47 here as well, but took 113 days for gravity to have a consistent reading. Ended at 1.020, final ABV 14.3% Moved to secondary at day 116. Added 1/2 oz oak for just over a month and 1 cinnamon stick for 4 days. Bottled at 173 days. It's a tad sweet, I'll use less honey next time, but overall quite good. Looking forward to doing a 4 gallon batch come apple season!
