Looking for recommendations for a May birthday trip for my partner. We are looking for a resort with a great spa (bonus points to hydrotherapy/water circuit options), proximity to hiking/outdoors activities, and great food on-site or nearby. I've looked at Arizona, both Castle Hot Springs and a few in Sedona (Enchantment/Mii Amo, Ambiente, etc.) but having a hard time making a choice.
