I go to school at a tiny university that doesn't have an accessible meal plan (they only provide a meat meal, veggie meal, or gluten/nut free.). Recently I got tested for food sensitivities and allergies, and my doctor told me to avoid:

Asparagus, Cauliflower, Green Pea, Navy Bean, Peanut, Rye, Spinach, Tuna, Watermelon, WHEAT/GLUTEN :'(, Yellow Squash, Barley, Cinnamon, Lima Bean, Salmon, Turkey, Honeydew, Mushroom, Mustard, Pear, Pecan, Spinach, Tuna

In addition, I'm also pescetarian, so with salmon and tuna gone, a good chunk of my protein just went out the window...

The biggest issue, though, is that there are no kitchens at all, and cooking appliances are heavily restricted. We're provided a microwave and a fridge/freezer. I have my own toaster and a blender. Also, as a college student, saving money is definitely on my mind.

So, do fellow vegetarians/pescatarians have any meals to recommend that only require a microwave? Bonus points if they follow the restriction diet or are easy to adjust :')
