French Toast

I am making oven baked French toast Sunday morning and I bought loaves of brioche and Texas toast today. They won’t get stale in time. Would it help to leave the bread slices on the counter uncovered to get dried out (and if so, for how long)? I’m planning on soaking the bread in the custard overnight then baking in the morning.
