Sirloin Roast 120°C with red wine reduction. Mediume rare.
First time doing a sirloin roast, with a red wine joux and creamy garlic mash. Any feedback? Cooked this 2kg puppy until 52°C internal. Rested for 1 hour. Back in at 240°C for 8 mins for the crust on the fat not in the photos but rendered well.
