Ideas needed for ways to stretch a small amount of chicken meat

My family is trying to 1. Reduce our meat consumption and 2. Reduce our monthly budget. So far I’ve cut out beef except for special occasions, and I’ve introduced a small amount of alternate proteins (chickpeas, beans, lentils, etc.). I’m trying to focus on making big meals with small amounts of chicken, so I can make one flat of dark meat last all week. Dark meat is the preference and generally cheaper. Plus the bone in options I can use for bone broth afterwards. Our family is only two adults, a child and a baby, but we live on leftovers all week. Most items are eaten over rice or with bread

So far in the rotation I have:
- Butter chicken/chicken curry bulked with lentils or chickpeas
- Chicken cacciatore with extra veggies and dried split peas
-lentil rice with a single baked chicken thigh

But honestly I’m getting a little stale with these ideas. I like curry/stew/saucy dishes that I can add whatever I want or have on hand. Anyone have some favorites they want to share?
