Tldr; got my kitchen gater tail medallions and wanna cook em up for the team but looking for advice. Ideally I want to use a grill/smoker.

I'm a sous chef and planned a deep cleaning day in my kitchen. It's on one of our off days and I made it clear to my whole team that it is absolutely not mandatory. If they wanna come in and help me deep clean the walk-in and all of our stations I'll make it worth their time. They've been talking about using alligator for months now (we are in Ohio. It isn't cheap here) so I want to surprise them on deep cleaning day with this $200 worth of gater that I managed to find, way too much beer, and a decent amount of smoke.

The problem is that I've never cooked alligator before and all I could find in my price range was alligator tail medallions. I'm not trying to actually "cook" in our kitchen on a day off so ideally I'm not turning on the fryers or anything like that. I got a smoker outback that we use occasionally and plan to roll up with my Weber.

Beyond that, I'm kind of in the dark. It's unknown territory for me and I really don't want to let them down here. They're doin me a solid by helping me on their off day and I want to make damned sure they know how much I appreciate it. Thoughts?
