Is there any benefit for Zwift cog for virtual shifting?

So I am looking to buy a Zwift click for virtual shifting. I currently have a Kickr (not sure which version, but bought it in 2022/23)

It has a dedicated cassette installed already, is there any point of getting the Zwift cog? (looking to buy through ebay, and the clicks only are about £15 cheaper than click with cog, so just wsant to save some money and if that is not needed at all)

What do I do if the heat is 'gone', but my food is not done yet, or cooking another dish right after. Do I just turn the heat back up? Or have to restart the process?

So I've been following the high heat, cold oil, then turn down the heat etc. and had great result with it being non-stick.

issue comes when if I am cooking for longer period of time, by the time the pan cools down a bit, the food is still not done. For example a thick cut of meat, one side is chared nicely, but when i flip it, it is cool enough that it is not charing as nice.

So do I just turn back up the heat? I tried it but it seems to start sticking at that point.

There are also other scenarinos like I like ot cook my meat first, then set aside and cook the veg, but at that point again the pan is not hot enough anymore to get some nice charring
