Automate hot water heater?

How would I automate this? I need to replace my hot water heater. I want to install something that would automatically turn on my electric water heater at 5am, then turn it off at 8am. I want to set up some kind of smart plug to let me control my water heater. 

What device would let me do this? Rheem water heater, 30 gallons, is 120 volts, 20 amps. 

I could get a smart outlet, would have to handle 20 amps, but I really don’t need a 120 plug. Is there any other device that would turn on electricity to a device on a schedule and turn it off? Or which smart outlet can handle 20 amps?

More info, Yes, I could buy a smart water heater, but:

  1. My Wyze smart thermostat only worked for 2 years, before it failed. Actually, it sort of works, but it looses wireless connection after 2 hours and Wyze had no answers, so I don’t trust the electronics on an expensive appliance. I don’t want to have to buy a new water heater after 2 years. 
  2. Smart water heaters are only available on mid-to high end models, I want a smaller, cheaper one.

I live by myself, I mostly only need hot water for a shower in the morning. I think 30 gallons is enough. I could turn it on manually to wash dishes once a week and to wash clothes every 2 weeks. I think I can save electricity cost by having it on only 2 hours a day.
