Can I get away with one year of undergrad research?

I just finished my first year in aerospace engineering, and I just got into a lab for the fall semester. I’m completing my undergrad in three years total, so I’ll essentially only have one full year of undergrad research by the time I apply for grad school. I have some cool hobby projects, internships, and clubs, so I’m not worried about that aspect of my application. However, I’m wondering if it’s worth it to join a second lab next year, take a gap year, or do something else to try and get more publications. I need to get my masters funded because of my finances, whether that be through a TA, RA, or fellowship, so I’m aware that I need a relatively competitive application.
