hi all! super new to this, but my starter has finally started doubling in ~4 hours, tripling after about 6 hours but then it just kind of.. stays there for at least 12 hours. I’d always expected that it would peak and then drop down a bit, is it normal for it to just stay tripled?
it’s a unbleached bread flour/rye mix if that helps. Thank you!
