What am I doing wrong 😭

Was gifted a Dutch oven as a wedding present and have been on a bread making kick for about a month now. (Non sourdough- starter intimidates me!)

I’ve been following very simple bread recipes and following the directions down to the last letter but it is just not working! Every loaf turns out flat whether I let it rise for three hours or over night, use different brands of yeast and flour - the dough always doubled in size in the bowl but when I bring it out of the oven it’s just so flat. I’m not sure what to do.

First pic: tonight’s loaf

Second pic: first ever loaf from a month ago

Last two pics: disgraceful attempt at classic sandwich bread.

Hi all - my sweet girl was attacked Monday on our walk. As we rounded a corner, another couple was walking their dog (also a pit), asked if their dog could say hi because he was friendly and started walking towards us. Before I could say no, the dog lunged and had our dog's face in his mouth. We went to the ER, she received great care and is at home recovering with some stitches and lots of love.

My biggest concern now (aside from an infection and making sure the stitches heal properly) is making sure that she does not now become reactive. She’s already a little tense on a leash. It's totally understandable that she may become reactive given the circumstances and the trauma, but is there anything I can do to help reduce the risk of her becoming reactive? | just want to set her us for success in any way I can!

Her details: 8-9 years old, spayed, rescue (I've had her for 7 years), pit mix, in an urban setting (no back yard, multiple leashed walks per day)
