I bought these dried ground greens from Pro Nutrition and they're really good for the gut but don't make my hummus look too appealing, I'm afraid.

This Lebanese salad is absolutely amazing and I have it weekly throughout yhe summer. When in doubt, a Lebanese salad is the answer, it's fresh, cold and tasty, and that mint just does it for me.

Peppers - 100 Grams

Zucchini - 100 Grams

Broccoli - 100 Grams

Tomato passata Italiamo - 50 Grams

Sesame seeds - 10 Grams

Salt, pepper

Ingredients

100g green lentils (dry)

200g pumpkin

20g pumpkin seeds

30g red onion

30g olive oil

30g lettuce

20g mustard

thyme

salt & pepper

Instructions

Roast pumpkin cubes at 180°C for ~20 min with part of the olive oil.

Boil lentils ~25 min until tender.

Slice onion and prepare lettuce.

Make dressing from mustard, olive oil, thyme, salt, pepper.

Combine everything and top with pumpkin seeds.

I've been a vegan since 2020 -- I was really struggling with emotional eating and organizing my meals beyond tofu and veggies, and I was also fighting a sugar addiction. I reached out for help from a food coach, and she really helped. Recommending the experience to everyone struggling with emotional eating and with meal plans and discipline.

The before photo was taken in June 2025, the after in March 2026.

I started at 77 kg and I now weigh 62kg.

My next step is hypertrophy, so I'll definitely be putting some weight back on as I build the muscle.

It took me a long time to find a nutritionist who understood veganism -- it can be a challenge to meet your macros and still be in a deficit while living a vegan lifestyle. So I'm grateful for her help, as well as for the support of this community.

I lift 5x/week, I know it's not ideal but it keeps me disciplined; I have a harder time training 2x or 3x/ week than 5x/week, because I keep postponing and finding excuses. This routine has helped me immensely, though it's not the recommended route.
