2 types of chashu (pork belly, pork shoulder), nori (don’t use the green stuff… it’s cheap and nasty), agenegi, Yu choy, Ajitama, menma, narutomaki, green onion whites, chili threads!
Soup is a tori chintan mixed 50/50 with dashi from kombu, niboshi, and katsuobushi.
My friend requested kikurage in his bowl which I obliged—personally I think they’re better in paitans, *especially* tonkotsu, and in chintans menma is a way better choice.
