Fast-Food Sauces [USA]

I love fast-food sauces. Chick-fil-A sauce, Horsey sauce from Arby’s, Burger King, zesty sauce, but everywhere I turn online, I’m warned that they are not celiac safe due to a high risk of cross contamination.

They are sealed! How is cross contamination possible when the sauce packets are sealed!?

I understand that “natural flavors” could be wheat derivatives, usually in barbecue sauce, but what about everything else?

I understand why food in a fast food environment could be cross contaminated, but this comes prepackaged. I see my celiac friends eating packets of ketchup from fast food restaurants all the time, and the ketchup isn’t labeled gluten-free. So why is this so much different?

If I open up the packet of sauce, wash my hands afterwards, and only dip directly into the sauce, there’s no risk. Is there something that I’m missing,

Has anyone with a gluten detection kit or a gluten detection dog ever actually tested the sauces themselves rather than the container they’re in?

Honestly, my food options are already so limited, and this feels like another case of people not really knowing what gluten is and so they would rather air on the side of caution and tell us not to eat it, but it feels like fear mongering
