The Citadel (Spoilers Main)
So The Citadel was built long before the Andal "invasion" (the Reach was never really invaded, or at least not conquered) by House Hightower. The Citadel is said to have been a plade for knowledge and learning, but then it's also said that Westeros didn't really have written language before the Andals. So did the maesters just use the First Men tradition of passing down customs and knowledge by word of mouth? Could they have had their own language that was simply replaced by the Andals? Did the famous library only start filling up after the Andals?
