Steep downhill: acc or paddle shift?

I bought my first Crosstrek (25 sport) late last year and am loving it! I’m returning to driving after 20 years of not needing a car.

Currently on my first big road trip - up through the west coast. So far mostly on the 101. She’s doing great and I’m learning to use adaptive cruise control etc.

Later this week I’ll be crossing from CA into OR on i5 which involves a steep 6% grade as you descend from the mountains. I feel a little nervous and want to be sure I’m using tools appropriately. Is it better to downshift using the paddles? Tap brakes? Use acc with settings done conservatively?

Sorry for the rather basic/dumb question but I figure this group knows the best and safest way to use the Crosstrek!! Thanks in advance.
