Are any 'rare' cultivars available anywhere?

I've looked around at the lists and as expected most places are sold out of any kind of tree, and those that aren't don't ship and are half the country away. Pretty much all I can find available are wild seedlings or saplings. I would be very interested in either a reportedly self fertil variety or any with white flesh and a different flavor profile. I'm in zone 6b and am aiming to start my own orchard and am trying to get as many in the ground this spring as I can. I already have Atwood and Prolific.

I've got 3 paw paw trees I bought recently. One from a local nursery who got them from Hollybrook (tag pictured) and two I bought from Logees. The guy at the nursery said he didn't know if the paw paw was grafted or not. I tried to find info in their website and it's 30 years old and I can't really find any good info, so I'm assuming it's from seed, although it's very tall compared to the other 2, and has just started to break dormancy. The KSU Atwood I have is the one pictured with the large fully formed leaves. The 'Prolific' is the one on the leftmost side with more yellow and narrow leaves.

I have two questions, first one is why are the leaves different colors/sizes. Is that a variation thing or is this more yellow one not doing well? It seems like the graft has taken but I did notice the parafilm is coming off around it. It's not showing signs of dying but its leaves aren't nearly as big or as dark as the KSU Atwood. The second question is relating to the middle specimen, it is in a 3 or 4 gallon pot, with roots coming out of the bottom, and is significantly taller (maybe 6 inches) than the others and was fully dormant when I bought it. Its starting to bud out but I have no idea how old this thing is, I have no experience with any kind of tree or fruit tree planting so I can't tell. It does look like heading cuts have been made on it but it does worry me that it may already be J-hooked. Based on pictures can any of these questions be answered? I sort of have a line to Neal Peterson if I absolutely need to (sorry I have to name drop) but I'm sure he's got better things to do than to answer some basic paw paw gardeners questions.
