

I’ve been in a real soup mood lately. Here’s one I’ve made with whatever I had. Hope you try this and enjoy 😊 (I cook with my heart and by feel most of the time. If you want to, feel free to add more or less of something)
Ingredients:
- 1.5lb Hamburger
- 1/4 (or more) head of cabbage, thinly sliced (I used a food processor)
- homemade (or boxed) broth (I used knorr’s beef broth)
- salt and pepper to taste
- a touch of MSG
- half an onion, diced or sliced
- 1 can tomato paste
- 1/2 cup finely diced white mushroom
Instructions:
- Browned my (lean) hamburger and removed most of the fat. Set aside after browning.
- Sauté the onion and mushroom. When almost done add tomato paste.
- Mix the tomato paste with the onion on medium heat. Don’t allow it to burn. (Could probably add other aromatics here if desired like garlic)
- After cooking the onion in the tomato paste for a while, add your cabbage in. Mix well so that all the green is covered in your tomato paste/onion mix.
- Cook until the cabbage is soft but not mush. Add your hamburger back in.
- I used an amount of water that ‘felt right’ to me. Likely about 6-8 cups. Use this with bullion powder or replace with your homemade broth.
- Bring to a gentle boil for 4-5 minutes. Reduce heat and let simmer for as long as desired. I let mine simmer for ~4-5hrs.
This made my SO and I approx. 8-10 servings if not slightly more.
