Hi all, sorry if this has been asked before but I don’t really know what’s what in this department and thought I would seek some more experienced advice.
I have very little know-how when it comes to software, beyond torrenting movies and occasionally torrenting Vegas Pro (video edit software), so something simple to use would be greatly appreciated.
I currently have a Microsoft Surface Go, which I have heard is somewhat good for installing various Linux desktop programs, but due to its age and Microsoft’s push into forced AI, I’d rather not have anything to do with their products anymore. Which has led me here.
I mainly use my tablet when writing (scripts), emailing and filling out documentation, so basically, access to word, final draft pro, gmail and gdrive would be all that’s necessary. Maybe the ability to access electronic signing pages and sites like signnow would also be helpful (but I would assume that’s just a part of the browser).

I’m leaning towards a Juno 3 or Librem with Ubuntu, although I’ve heard the librem is just an overpriced phone and the Juno’s can have some pretty big problems at times (which I’m not sure how easily I could solve). I only discovered this page this morning and learned about Linux mint, which sounds like it might actually suit my needs the most but even if so, what would it run best on? Again, sorry for the mundane questions but any and all answers for which tablet would suit my needs and how to go about learning more (aside from YouTube) once I’ve got it, would be hugely appreciated.
