I have been documenting teff research for a wellness brand I am building from Ethiopia. The glutathione finding is what got me most curious.
Researchers at UNC Greensboro received NIH funding to study how brown teff extracts affect human cells. Their study found teff extracts activated cellular glutathione production. They received new NIH funding to expand the study to 85 brown teff varieties.
Combined with these facts:
- Ethiopian highland populations have eaten fermented teff for over 3000 years
- They observe 200+ days per year of plant-based fasting
- They live at 2000 to 3000 meters altitude
- They have low rates of many diseases that affect Western populations
There is more to study here than I expected.

Anyone in this community familiar with the glutathione activation research or with traditional Ethiopian dietary patterns?
