I'm considering downgrading my Unraid server to repurpose the GPU, RAM, CPU, and Mobo.

What are your recommendations for a Intel based CPU/Motherboard that can support 2 nvme drives, 4 SATA drives, and handle plex, download clients, and a few other containers?

I currently have an ASRock Z790, i7-14700K, 64GB ram, and a 5070ti.

It's been rock solid for a year and a half, but the game virtualization user experience isn't as great as I hoped.
