Beginner skier here and looking for some advice.

I recently bought ski boots (rossignol all track 110HV) for 50 percent off after the season ended) I was professionally fit and they knew I was beginner level. I wanted a really nice pair that would last as I know these are the most important piece of equipment, so I still spent a decent amount on these. Now I’m looking to get skis + poles. I’m based in NJ and was planning to go to places like Ski Barn or similar shops.

I also have access to Big SNOW at American Dream and was thinking about trying skis there first before buying anything.

My main question is:
Do I actually need to demo/test skis first as a beginner, or is it fine to just go to a ski shop and ask for a solid beginner setup that they can fit to my boots? I know my technique isn't like really there yet so I feel like demoing skis which is what the guy said wouldn't make so much sense as I don't really know what I'm looking for.

I’m trying to keep costs reasonable and avoid overbuying gear I don’t need at my level (except for the nice boots lol).

(edit: I skied last season and loved every second of it. I was starting to click some parallel turns together towards the end of the season, and I can stop well in a snowplow, and am getting better at hockey stopping. I have the background in ice hockey so I feel like it helped me pick it up quicker. I rented last season)

Any advice on the best approach would be appreciated.
