Recommended finishes for French drain trench dug at side of stone cottage

Ahoy. Long story short, we’ve had damp issues in our fireplace and side of the cottage which we were very confident were caused by our neighbour building a concrete plinth square against the wall of our house. This was also compounded by work done on our cottage in cement not lime, and a myriad of other badly done things.

BUT ANYWAY, trench is now dug for a French drain we are repointing all the stonework at the base of the cottage in lime and the plan has come together. However we have the issue of edging the trench so that our neighbour can have it tarmaced again up to our lovely French drain. Problem is, the trench has a bit of an angle due to the nature of the earth/stone under where his plinth was.

Are there any recommendations on how I could achieve a nice square finish to the concrete edging boards? My current working theory is dig in square footings for bricks, which we will cement the concrete boards upon. But could be a headache.

Please ask if any extra info/measurements could help.
