Hey everyone

Beginner sourdough maker here, following this recipe two times now https://littlespoonfarm.com/sourdough-bread-recipe-beginners-guide/

Tldr, 1/4 cup starter, 400g bread flour, slightly more water than directed because it was very dry and not even close to a shaggy dough

Starter was looking pretty active, however I might have used it just after it's most active? Big bubbles coming out with a few taps on the jar, slight dome shape. Fed about 10 hours prior, 1/4 cup unbleached flour, water enough to make thick pancake batter consistency

I did three stretch and folds, and about 6.5 hour bulk fermentation since it looked like it was getting close to doubling in size in the bowl. Maybe I misjudged the size and should have let it ferment longer?

I then refrigerated it over night, and baked 20 min covered and 25 uncovered this morning in Dutch oven

She's definitely dense, and I think this one is more dense than the first
