Today I made my first toast loaf and it was soo good! I used the 2nd version of the ‚Grant bakes‘ recipe.

Ingredients:
110g active starter
200g water
50g milk
25g butter
10g maple Sirup
10g salt
450g Manitoba flour (15.5g protein)

Process:

  1. Mix all ingredients together
  2. Knead for 8 min until a firm ball forms
  3. Bulk ferment for approx. 3.5h
  4. Preshape and let rest for 15 min
  5. Shape and add to tin
  6. Second rise until doubled (didn’t picture it)
  7. Preheat oven to 205C
  8. bake for 20 min with lid on
  9. bake for 20 min with lid off
  10. take out of tin and cool for 1.5h

My lovely starter seems to have taken steroids lol.

I fed it 1:6:6 around 22h and by 7am it tripled.

I managed to slightly overproof the dough and added it to the fridge for about 18h. My fridge is at 4C and usually the fermentation really slows. This time the dough grew some more 😳.

Anyways, while the oven spring wasn’t as good as usually is, it’s not as bad as I expected. The crumb is also fine, so no complaints, other than not adding a nice pattern to it as it wasn’t holding shape.
