Insurance want Copart to salvage immediately in Scotland

I was involved in a car crash a few days ago. At a line of traffic and was crashed into from behind. The other driver immediately admitted liability saying he wasn't looking at the road - repeated the same statement to the police and when I questioned the police on this, was told they do not record any of that and it's a matter for the insurance. Surely admitting driving without due care and attention is a crime, but alas....
Ambulance and police arrived, taken to hospital, etc. Discharged later that night.
My car was recovered home by breakdown recovery and I then phoned my insurance to report it - assuming that was the correct step.
I provided details of the accident, details of those involved and the damage to my car.
I was immediately told that their systems have said this will be a total loss - without even seeing any photos or anything, and I'm now receiving texts from Copart to arrange collection to allegedly assess the vehicle which they need to do at their salvage yard. Everyone knows what Copart are ( 💩👜).
Alas, this car is quite old - a Citroen from 2011 - but it has a specific purpose for us. It took me 6 months to find this exact model with this specific engine and gearbox combination and luckily found it just over 2 years ago. It's the Exclusive model with RHH engine and AM6 gearbox. While the 1.6 HDI C4 Grand Picasso are plentiful, and a few 2.0 HDI with the semi-auto EGS (manually piloted automatic) there are none of my model with full automatic and 161bhp engine available for sale anywhere - I have tried autotrader, car gurus, motors, gumtree and eBay (current and completed listings) and not found a single one. It's a rare car for sure and because it fits our needs perfectly for caravan trips with its height adjustable air suspension, it cannot be replaced like for like and therefore has no monetary value to us.
Surely as soon as Copart take it away, I have no choice to accept whatever few hundred pounds they offer? It's not all about the £ to me, but we paid £3500 for it just over 2 years ago.
The other parties insurance company have called and left a voicemail this morning admitting full liability, but I haven't spoken to them yet so no idea what they want...
What are my options here? 🙏
