I have just started watching Below Deck Med, starting with season 3. In episode 12, when they arrive at Santorini, all of a sudden pops Niko, "Greek deckhand". Where was he this whole time? Does he not bunk or eat with the crew?

I also think there were Greek engineers in episode 1, why don't we ever see them?

In the gastroenteritis episode, Danny forfeits his tip, the Captain then says they will divide it 11 ways, which confirms they have other people working, how do they manage not to film them?

I'm genuinely confused
