Just sharing my successful experiment. 14 days ko binababad sa Engkanto Ube Lager yung Kesong Puti na gawa sa gatas kalabaw. Bagay na bagay yung flavor ng Ube Lager sa Kesong Puti. Nagkaroon ng parang Ube milk candy flavor yung kesong puti at walang pait. Sa susunod cheddar gawa sa gatas kalabaw naman yung ibababad ko sa Engkanto Ube Lager.

Kesong puti is a Filipino white cheese that is traditionally made from water buffalo milk and curdled with vinegar. I decided to soak it for 14 days in local craft beer called Engkanto Ube Lager which is one of the best beers I have tried. It is surprisingly a good pairing. The combined flavor of the cheese and the beer reminds me of Ube milk candy. It is fascinating that the cheese didn't melt or become slimy and there was no off flavor. The cheese also absorbed most of the color from the beer.
