Fish processing

Looking for recs on gear to process fish and poles for 2 very small kiddos. Knives, scale removers, stuff im probably not thinking about. Doesn't need to be dirt cheap stuff id rather buy once then buy twice. Any suggestions appreciated.

Hi all. Last year in the summer I "finished" a trellis wall. 4x4 treated posts dug 2 feet underground with 30-40 pounds of concrete poured around each one with a gravel base below and around. Those who know what theyre doing would probably guess this was not enough, and they'd be right. Windstorm in the early spring took half the posts down, and the next day the next windstorm took the other half. I had planned on doing 2x4 Xs in between for support but that would've made the problem worse in the fight against the wind. Does anyone have experience with building these that could enlighten me on what I can do better next time?

Im also considering hiring someone to build this, what do you think they'd charge?
