Advice for starting my home server

Recently learnt about the world of home servers and over the last couple weeks I've set up docker desktop working on windows on my nuc11 which i keep in the lounge. I use my pc with my tv as a monitor both for media and general use. Ive got an arr stack and immich all working on it and would love to start using home assistant. Pi hole also sounds good. Currently only have a 4tb external hdd, may or may not buy more but with local and cloud backups on all but movies and tv im ok with the possibility of losing it when that packs in, I'll mostly just be keeping a large stash of new movies and favourites. Everything is very expensive to upgrade here on the other side of the world in NZ.

I still have an old nuc5i7 that works. 256gb ssd, 16gb ram. Thinking i could buy a mini rack cabinet for the garage for it and the harddrive with small room for upgrades if i ever do more. Would this pc be able to run it ok? And can i have eli5 advice on how to set it up. Tried AI'ing it and getting told different things in terms of proxmox, lxc, vms etc. which i really know nothing about or struggle to comprehend. I learn by seeing and doing but need a plan of what I actually want done. Have only briefly used Linux too long ago to remember what it even is really. Once I know the right structure I'll be fine getting it done with help from auntie google and uncle chatgpt. I just need help with what my end goal should be or if i need to dial back what the nuc5 can handle, if anything (from what I've seen it won't be able to transcode but my low storage means I'm ok with that, already using profiles to deal with it in current set up).

I'm already addicted, please help me continue
