How do people stick to calorie deficits consistently for a serious amount of time? (27 M)

I do enjoy going to the gym, but have been on and off with it for the past 5 years, consistent in the first 3 then took like a one year break as I just lost all motivation now going about 4-5 times a week.

I started off as the "skinny fat" person but gained weight and muscle consistently, from 11 stone to about 15 stone and rising. I have never reliably been able to stick to any sort of calorie deficit for more than a month at a time, then I'd just go back to eating rubbish, then maybe try again a few months after and do the exact same.

I'd probably say that I fail purely to just ease of access to bad foods, never eat breakfast and always hungry late at night and snack on unhealthy foods a lot, always cook more food than I need and overeat in meals when I make them myself. Never drink water, at all, just diet drinks.

Just looking for any changes or tips from people than successfully stick to calorie deficits/cutting/losing weight whether its aim for daily water intake, don't buy any unhealthy foods whatsoever, intermittent fasting etc.
