I tried a low glycemic diet a few weeks ago and was struggling to get all of my carbs and calories. I know to prioritize eating over low glycemic, but how do you find a balance?

I have to eat at my caf cause I have to pay for meal points for my scholarship, so it makes it difficult to find more whole foods. I stay at the baked chicken and salad bar stations where they have honestly great veggie and fruit options. I'm looking for a way to eat low glycemic but will help with achieving my 260g carb goal as well as my calorie goal.

Any advice?
