If Gideon wouldn't have been defeated after he took Dipper's journal in Gideon Rises, he would've eventually found the portal while searching for the 1st journal and Bill would've tried to make another deal with him to open the portal.
Ironically he would've had McGucket help reopen the very thing he built thirty-odd years ago, ruined his life and made him want to forget everything, losing himself in the process.
Gideon would've given Bill what he originally wanted from his deal back in Dreamscaperers "I'll help you with this and in return you can help with something I've been working on, we'll work out the details later". Bill might've seen this as a possibility even with the first deal failing, it just ended up as a alternative one from our timeline. I wonder how the show would've been if it was decided to let Gideon win.
