I tried Sourdough, this is my third attempt. All three times I am not getting the rise that is expected.

Recipe:

150g starter, 300g warm water, 500g bread flour (split between white and brown), 10g salt, 20 ml olive oil.

Starter is 75g ap flour and 75g water through feedings.

Ambient/room temperature averages out around 19/20 degrees Celsius.

Process:

Mix starter with warm water and oil. Then add flour and salt. Rest for about half an hour then start the stretch and fold. Wait 1hr and do again. Stretch and fold total 3 times. Then I leave for about 7-10 hours (due to the temperature) for the rise, but I never get the rise expected. After the alloted time, I do put it in the fridge overnight to bake in the morning.

Baking process is standard 20m in DO, the 40 mins uncovered at 235 Celcius and 200 C respectively.

I fills out but doesn't rise. At best I got is about 8cm in height.

What am I doing wrong? Are my timings off?
