TLDR how do you know whether blue or red kayn is more "meta" right now? Which one is best and why? How/where do i confirm that?

I've been trying out jungle for the first time in my 2 years of playing (only mid), and I kinda settled on Lillia because I often feel my team lack a tank killer, she has a fun kit and a lot of mobility (which i love in a champ).
Problem is when my team pick too much AP or she is straight up banned (or picked) and i have to play something else. I could easily lock in Nocturne and just autopilot the game, but i get bored. So bored. I need to feel like i have some outplay potential in my champ, so all the small things during a game feels rewarding and not only the end result - i'm sure many of you feel the same.
Kayn, Talon, Viego, Khazix and Kindred has been my alternatives so far. And I think i like Kayn the most - quite straight forward kit, so in that sense, not a huge skill ceiling i reckon, but the mobility makes up for the lack of outplay potential through mechanics/kiting etc. - if you disagree, please feel free to make your point.
I'm not entirely sure how to read the stats on Kayn though, on analytic websites. I guess on items and runes, that this person has gone red or this person has gone blue. Or this build must be for red, this must be for blue. But there are no way to tell for sure right?
And no way to tell which champ is currently strongest? I saw some OTP GM Kayn on EUW i think, he was just spamming what i guess is blue Kayn, judging on lethality items and DH rune.
But i read somewhere that red is supposedly best rn.
What do you think?? How can know when just looking around?
