
Week 19: Tricolour - Caprese Soup
My favourite tricolour in cooking is Caprese :) in all its forms so this time I made a soup as the weather is getting colder now as we head into winter.
For the soup I baked 1kg mixed tomatoes and a garlic bulb then blended them with some sundried tomatoes, 1 tbsp brown sugar, 1 bunch of basil and 1.5 tbsp red wine vinegar. Then served with some bocconcini and basil leaves :)
