I do general handyman and maintenance type work and a customer asked me to add a garbage disposal to her single basin kitchen sink. What is this odd loop on top of the plumbing pipes under the sink though?

I noticed a smell coming from the sink drain and intend on making sure the discharge pipe coming from the garbage disposal (once I install it) is at a slight angle away from the disposal so water doesn’t back up.

Can I get rid of that loop though? Or should I install a vent there?
