Does it hurt my chances if I ask not to be recorded in interviews? Can I ask for a copy?

I've been interviewing for I.T. type positions. In some virtual interviews they want to record the meeting. I'd prefer not to, especially if it's a first round interview with a less known company.

Recently I got an invite to an interview where they said they would be recording it to use the AI BrightHire, but if chose to opt out of being recorded this wouldn't impact my candidacy.

Am I being paranoid? If I do ask not to be recorded, could it negatively impact my chances, even if they asked if I was OK with it in the first place? Should I ask about their privacy policy, like how long the recording will be stored? Can I ask for a copy of the recording for my own reference?

There's a few reasons why I'd rather not be recorded but one is I already find it hard to connect with people in interviews (especially formal ones) and knowing I'm being recorded is distracting.
