Horse girl book I read in middle school

I can’t remember much about it, the main character was a girl and the cover was orange with i think a 70s looking flower pattern on it? I can’t remember if her horse ended up being a horse goddess or something but I think the horse’s name was Epona. That’s all I can remember!

I'm currently a senior biology major and I have a good job that is not biology focused, so I'm not really scrambling to get a job out of college or anything. I took a parasitology class this semester and I loved it. I love the science aspect, the political aspect, traveling and helping people, problem solving, etc... but funding for research in the US is so bad right now I don't think there are many options, and I'm not interested in vet school or med school- my GPA is not the greatest and I don't have research experience. I looked into the Peace Corps but I think I'd have a hard time getting cleared medically because of severe allergies, which really sucks and I'm pretty sad about that. I really love parasitology and I would love to do something related to that while traveling and helping people. I'm also interested in medical illustration, but I don't see myself doing that forever. What sort of careers can I look into?
