Found my ticket stub from October 4th, 1997—Michael Jackson’s HIStory Tour. And not just any tickets… we were in the Golden Circle

Back then, it was me, my girlfriend (now my wife of **25 years**), and MJ live on stage. The energy was insane, the music was everything, and being that close felt unreal.

Finding this stub brought it all back—the lights, the crowd, MJ doing his thing like no one else could. And yeah, the girl I took with me? Still here, still putting up with me after all this time.

Some memories just stick with you. This is one of them.

Wednesday night dinner for 4 on the MiniMax 🍔🔥

200°C indirect.
Burgers cooked 7 minutes per side, halloumi 3 minutes per side.

Had the day off and it’s a long weekend, so started it off with chicken wings

Carolina Reaper seasoning
No oil, dry marinated for 3 hrs

Cooked indirect just under 200°C / 392°F for 1 hr 10 min

Ran them longer for the char, still super moist

Day 2. Second cook on the MiniMax.

Spatchcock chicken. Set up indirect at 180°C / 356°F. Cooked for about an hour, checking internal temps, then removed the plate setter and finished direct, flipping both sides to crisp up. I also squeezed some lemon on both sides, saw it online and gave it a go and it worked out perfectly, my critics at home second that motion.

Pulled at around 75°C / 167°F breast and ~82°C / 180°F thigh.

Heats up way quicker than my XL. It was epic.

Got this little baby today. First cook is hotdogs.
