Food ideas please!

I am about 5 weeks into my journey and it’s going pretty well! My only issue is that, as expected, my appetite is reduced and I am having trouble finding healthy snacks and meals that sound appealing. Like I will be hungry but nothing really sounds good.
I am a single mom and tend to not have a lot of time/energy to cook for myself, so I am looking for quick and easy. What have been your favorite healthy, simple go to snacks and meals? Especially for those times when you know you need to eat something but don’t have an appetite. Thank you!
