
I grew up in the 90s with a mom who tried every diet craze there was. One thing that stuck was replacing sour cream with cottage cheese on baked potatoes.
Now as an adult this is a go-to "struggle" meal. Thankfully I don't struggle, I'm just a busy professional who tries to eat well enough and frugally.
A serving of low-fat cottage cheese has upwards of 14g of protein while being fairly lean (and cheap). Russet potatoes are a dime a dozen, almost literally. Add whatever else you have, maybe some steamed broccoli or dump out some other leftovers you have laying around. The potato and cottage cheese are fairly plain and become vehicles for other flavors, a scoop of chili really elevates things. However the warm potato is extremely comforting and the cottage cheese is a fresh contrast, especially if you have green onion.
