Does payment gateway make a difference ?

We've been trying to test different gateways for our saas merchbanao.com, we started with razorpay and then moved to paypal for global payments, we had 0 payments with razorpay and got a few with paypal and have just moved to dodo payments.

Given the fees for dodo > paypal > razorpay
I just wanted to know if in your experience it makes any difference what gateway you use ?
