Need help with kitchen design.. Pivoting from vintage style to something more modern after installing cabinets

Hey All,

I've tried using AI to generate ideas, but am at a loss as I'm limited by my own imagination. I have these birch cabinets I put in and have montebello quartzite coming in later this week, but I can't figure out what backsplash or how to do open shelving on the left wall in an aesthetic that works with this slightly more modern kitchen than I anticipated.

My original idea was to do taupe painted cedar planks with open wood shelving (wooden brackets) on the left wall, and to have matching painted cedar planks for the peninsula back. Now, I'm thinking I need to do something a bit more modern.

I also have no trim installed yet - I'll likely go with a victorian appearance for that with baseboards ~10" high and similar fluted window trim. Unsure of stain color for that trim yet as I'll either go walnut or a lighter color. Old 1800s building. Let me know if I should add more info!
