I mean pianists who have spent the bulk of their career in this century, and whose engagement with a composer is both deep and broad  to the extent that their work is renowned and  has a genuine stamp of authority in that repertoire …however subjective or controversial such judgments may be.

The 20th-century examples to my mind:

Possible examples:

Try as I might , I can't find the full album of this legendary performance on Apple Classical Music or Spotify . All I can dig up is a fragment that's a few min in duration .
