How will you define it? I always thought I just have to make sure a food falls under the "complex" category rather than "simple" for carbs to be considered healthy.

But the more I learn about nutrition, it's not that simple. I don't think I'll ever fully know what "healthy" means but do wanna educate myself as best as I can.

Here's the thing, i learnt about the glycemic index recently and am left confused. Some "complex, whole" foods like say potatoes, watermelon have high GI meaning how quickly the food is absorbed by our body and we experience a sugar crash.

So does that mean potatoes and watermelon are unhealthy? Why are complex carbs healthier when they have a high GI?
